Vegan peach salad
It has been a whole while since I have posted a salad recipe. But like the previous ones I made, it is more of a meal than a simple salad. This vegan peach salad is a recipe that I have stumbled across on social media and I have slightly modified it. The original is made by natsnourishments, who is an amazing blogger (and a personal chef I think). So I highly recommend you check out her recipes as well.
In the realm of culinary creativity, salads have the potential to transcend their reputation as mere side dishes and become star attractions. And as you may suspect, this is one of those dishes. A delightful recipe featuring the harmonious combination of grilled peaches, vegan white cheese, and spelt. This grilled peach salad is not only a visual delight but also a tantalizing medley of flavors that will not fail to impress you.
Peaches, with their luscious sweetness, are a beloved fruit of summer. Grilling them not only adds depth to their flavor but also imparts a beautiful caramelized touch. The grilling unlocks their natural sweetness, creating a delightful contrast of smoky and sweet notes in the salad.
Whether you’re a vegan, vegetarian, or simply seeking to incorporate more plant-based meals into your diet, this vegan peach salad will satisfy your cravings for a wholesome and delicious dish.
Some health benefits
This salad is not only a feast for the taste buds but also a nutritional powerhouse, offering a combination of fresh produce, ancient grains, and dairy-free alternatives.
Spelt, an ancient grain with a nutty flavor and pleasant chewy texture, is a fantastic addition to this grilled peach salad. Not only does it bring depth and substance, but it also offers a range of health benefits. Spelt is a good source of fiber, protein, and essential minerals, making it a nourishing choice that complements the fresh ingredients.
Peaches are not only a delectable and juicy fruit but also offer a range of health benefits. Let’s explore the potential health advantages of incorporating peaches into your diet.
Peaches are packed with antioxidants, which help combat the damaging effects of free radicals in the body. These antioxidants, including vitamin C, flavonoids, and phenolic compounds, play a crucial role in reducing oxidative stress and protecting cells from damage. By including peaches in your diet, you can support overall health and reduce the risk of chronic diseases.
Peaches are a great natural source of essential vitamins, particularly vitamin C, vitamin A, and vitamin E. Vitamin C is known for its immune-boosting properties, promoting a healthy immune system, and aiding in collagen production for healthy skin and tissues. Vitamin A contributes to good vision, healthy skin, and cell growth, while vitamin E acts as an antioxidant, protecting cell membranes and supporting overall skin health.
Fiber is essential for maintaining a healthy digestive system, regulating blood sugar levels, and promoting satiety. Peaches are a good source of dietary fiber, both soluble and insoluble. Soluble fiber helps to slow digestion and regulate blood sugar levels, while insoluble fiber adds bulk to the stool, promoting regular bowel movements and preventing constipation. Including peaches in your diet can contribute to a healthy digestive tract.
With their high water content, peaches are a refreshing and hydrating fruit. Staying adequately hydrated is crucial for maintaining optimal bodily functions, supporting cardiovascular health, promoting radiant skin, and aiding in digestion. Enjoying peaches, especially during hot summer months, can help quench thirst and provide essential hydration.
Peaches contain various bioactive compounds, including phenolic compounds and flavonoids, which possess anti-inflammatory properties. These compounds have been associated with reducing inflammation in the body, which plays a role in the development of chronic diseases such as heart disease, diabetes, and certain types of cancer. Incorporating peaches into an anti-inflammatory diet may contribute to overall health and well-being.
They are a low-calorie fruit that can be a valuable addition to a weight management plan. With their natural sweetness and high fiber content, peaches can help satisfy cravings and keep you feeling full for longer periods, potentially reducing overall calorie intake. Furthermore, their hydrating properties make them a refreshing and satisfying snack option.
Vegan peach salad
100 g of spelt
2-3 ripe peaches
100 g of frozen green beans
1/2 of avocado
vegan white cheese
1-2 tbsp of olive oil
1 tbsp of pomegranate syrup (or aceto balsamico)
juice from 1/2 a lemon
salt and pepper
- Rinse the spelt. Bring a pot of water to boil. Cook the spelt for about 30-40 minutes. When it’s done, remove the water from the pot, rinse it with cold water and set aside.
- Cook the frozen green beans according to the instructions. Rinse them with cold water and let them cool down.
- Half the peaches, remove the pit. Slice the ripe peaches into slices. Heat a little bit of olive oil on a non-stick pan. Cook the peaches for a few minutes over medium-high heat, until they become slightly burned (from both sides). Set them aside and let them cool down.
- Cut the avocado into small cubes. In a large bowl mix together the spelt, green beans, avocado and basil leaves. Add the lemon juice, olive oil, salt and pepper to the bowl and mix everything (or toss around) until it’s well combined.
- Crush/pull apart pieces of vegan white cheese. Transfer the salad mixture in a serving bowl. Top it off with your grilled peaches and scoops of vegan white cheese. Drizzle the vegan peach salad with pomegranate syrup.
- You can also play around with ingredients (add rucola, use any vegan cheese you like and so on). These measurements are enough for one large salad, which was a whole meal for me.
