It has been a whole while since I have posted a salad recipe. But like the previous ones I made, it is more of a meal than a simple salad. This vegan peach salad is a recipe that I have stumbled across on social media and I have slightly modified it. The original is made by natsnourishments, who is an amazing blogger (and a personal chef I think). So I highly recommend you check out her recipes as well.

Vegan peach salad

Recipe by Margo Drobi

Ingredients

  • 100 g of spelt

  • 2-3 ripe peaches

  • 100 g of frozen green beans

  • 1/2 of avocado

  • vegan white cheese

  • basil leaves

  • 1-2 tbsp of olive oil

  • 1 tbsp of pomegranate syrup (or aceto balsamico)

  • juice from 1/2 a lemon

  • salt and pepper

Directions

  • Rinse the spelt. Bring a pot of water to boil. Cook the spelt for about 30-40 minutes. When it’s done, remove the water from the pot, rinse it with cold water and set aside.
  • Cook the frozen green beans according to the instructions. Rinse them with cold water and let them cool down.
  • Half the peaches, remove the pit. Slice the ripe peaches into slices. Heat a little bit of olive oil on a non-stick pan. Cook the peaches for a few minutes over medium-high heat, until they become slightly burned (from both sides). Set them aside and let them cool down. 
  • Cut the avocado into small cubes. In a large bowl mix together the spelt, green beans, avocado and basil leaves. Add the lemon juice, olive oil, salt and pepper to the bowl and mix everything (or toss around) until it’s well combined.
  • Crush/pull apart pieces of vegan white cheese. Transfer the salad mixture in a serving bowl. Top it off with your grilled peaches and scoops of vegan white cheese. Drizzle the vegan peach salad with pomegranate syrup. 
  • You can also play around with ingredients (add rucola, use any vegan cheese you like and so on). These measurements are enough for one large salad, which was a whole meal for me.
